01 - Boil pasta in salted water according to package directions until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
02 - Heat 1 tablespoon butter in a large skillet over medium-high heat. Season shrimp with salt and pepper and cook 2–3 minutes per side until opaque and pink. Remove shrimp and set aside.
03 - Add remaining 1 tablespoon butter to skillet. Sauté onion for 2–3 minutes until translucent, then stir in garlic and cook 1 minute until fragrant.
04 - Stir in sun-dried tomatoes and cook 1 minute. Pour in chicken broth and simmer, scraping up browned bits from the pan.
05 - Lower heat to medium-low. Incorporate heavy cream, Parmesan cheese, Italian herbs, and red pepper flakes. Simmer 2–3 minutes until sauce thickens slightly.
06 - Add spinach to skillet and stir gently until wilted.
07 - Return shrimp and drained pasta to skillet. Toss to combine with sauce, adding reserved pasta water incrementally to adjust consistency.
08 - Season with salt and pepper to taste. Plate and garnish with chopped parsley and extra Parmesan cheese. Serve immediately.
