# What You'll Need:
→ Snack Bar Base
01 - 2 cups rolled oats
02 - 1/2 cup almond butter or peanut butter
03 - 1/3 cup honey or maple syrup
04 - 1/4 cup unsalted butter, melted
05 - 1/2 teaspoon vanilla extract
06 - Pinch of salt
→ Homemade Gummies
07 - 1 cup 100% fruit juice, such as apple, berry or orange
08 - 2 tablespoons unflavored gelatin
09 - 2 to 3 tablespoons honey or agave syrup
→ Mash-Up Toppings
10 - 1 cup freeze-dried fruit, lightly crushed (strawberries, raspberries, etc.)
11 - 1 cup freeze-dried candy, crushed or chopped (such as Skittles or marshmallows)
# Method Steps:
01 - Line an 8x8-inch baking pan with parchment paper.
02 - In a large mixing bowl, blend together rolled oats, almond butter, honey, melted butter, vanilla extract, and salt until thoroughly incorporated. Press the mixture evenly into the lined pan and transfer to the refrigerator.
03 - Pour 100% fruit juice into a small saucepan. Sprinkle gelatin evenly over the surface and allow it to sit for 5 minutes to bloom. Warm gently over low heat, stirring until gelatin is fully dissolved. Add honey or agave syrup, stir well and pour mixture into a parchment-lined small baking dish. Refrigerate for 45 to 60 minutes until set.
04 - Once gummies have set, remove from the refrigerator and cut into small cubes.
05 - Retrieve the chilled oat base from the refrigerator. Distribute homemade gummy cubes, freeze-dried fruit, and freeze-dried candy evenly over the surface. Press gently into the base to secure.
06 - Return pan to the refrigerator and chill for an additional 10 to 15 minutes to allow toppings to set.
07 - Use parchment paper to lift the bar block out of the pan. With a sharp knife, slice evenly into 12 snack bars and serve.
