# Method Steps:
01 - Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
02 - In a large bowl, toss carrots with olive oil, cumin, smoked paprika, sea salt, and black pepper to coat evenly. Spread carrots in a single layer on the prepared baking sheet.
03 - Roast the carrots for 20 to 25 minutes, turning halfway through, until tender and caramelized. Remove from oven and allow to cool slightly.
04 - Whisk together tahini, lemon juice, maple syrup, minced garlic, and salt in a small bowl. Gradually add water, whisking until the sauce achieves a smooth, pourable consistency.
05 - Arrange mixed greens on a serving platter or individual plates. Top with roasted carrots and sliced red onion.
06 - Drizzle the tahini-lemon sauce over the salad, then sprinkle with pomegranate seeds, toasted seeds, and chopped parsley. Serve immediately.
