02 - Food coloring gels (pink, blue, yellow, green—gel coloring preferred for vibrancy)
→ Cloud Sauce
03 - 7 fl oz whole milk or plant-based milk
04 - 4.2 oz cream cheese or vegan cream cheese alternative
05 - 1 tbsp unsalted butter or vegan butter
06 - 2 tbsp grated parmesan cheese or nutritional yeast
07 - 1 tsp cornstarch
08 - 1/4 tsp salt
09 - 1/4 tsp ground white pepper
→ Garnish
10 - 2 scallions, finely sliced
11 - 1 tbsp toasted sesame seeds
12 - Edible flowers or microgreens (optional)
# Method Steps:
01 - Bring a large pot of water to a boil. Divide boiling water evenly among several heatproof bowls based on the number of colors desired.
02 - Add a small amount of gel-based food coloring to each bowl, stirring thoroughly until vivid hues are achieved.
03 - Split noodles into equal portions and simmer each in its respective colored water for 2–3 minutes less than package instructions. Rinse each batch under cold water, drain with a colander, and set aside.
04 - In a saucepan over medium heat, melt butter. Add cream cheese, whisking until a smooth texture forms.
05 - Pour in milk, add parmesan (or nutritional yeast), cornstarch, salt, and white pepper. Cook while whisking constantly for approximately 5 minutes, or until the mixture is thick and velvety.
06 - Fold the colored noodles gently into the sauce, maintaining vibrant separation for a cloud effect. Swirl if a marbled aesthetic is desired.
07 - Plate immediately. Top with sliced scallions, toasted sesame seeds, and, if preferred, edible flowers or microgreens.
