# Method Steps:
01 - Preheat the oven to 400°F. Lightly grease a large baking dish with olive oil.
02 - Place pork chops in the prepared baking dish. Season both sides evenly with salt, black pepper, smoked paprika, and ground cumin.
03 - Scatter sliced red onion and red bell pepper around the pork chops in the dish.
04 - Combine BBQ sauce, diced mango, honey, and apple cider vinegar in a mixing bowl. Stir until well blended.
05 - Pour the prepared mango BBQ sauce evenly over the pork chops and vegetables. Cover the baking dish tightly with aluminum foil.
06 - Transfer the dish to the oven and bake, covered, for 25 minutes.
07 - Remove the foil and continue baking for an additional 15 minutes, until pork chops reach an internal temperature of 145°F and the sauce is bubbling.
08 - If desired, broil the dish for 2 to 3 minutes to achieve a caramelized top.
09 - Allow pork chops to rest for 5 minutes before serving. Sprinkle with chopped fresh cilantro if desired.
