# What You'll Need:
→ Lamb kofta
01 - 1 lb 2 oz ground lamb
02 - 1 small onion, finely grated
03 - 2 cloves garlic, minced
04 - 1 tbsp chopped fresh parsley
05 - 1 tbsp chopped fresh mint
06 - 1 tsp ground cumin
07 - 1 tsp ground coriander
08 - 1/2 tsp ground cinnamon
09 - 1/2 tsp smoked paprika
10 - 1/2 tsp red pepper flakes (optional)
11 - 1 tsp salt
12 - 1/2 tsp freshly ground black pepper
13 - 1 tbsp extra-virgin olive oil
→ Tzatziki
14 - 3/4 cup Greek yogurt
15 - 1/2 medium cucumber, finely grated and excess water squeezed out
16 - 1 clove garlic, minced
17 - 1 tbsp chopped fresh dill
18 - 1 tbsp chopped fresh mint
19 - 1 tbsp lemon juice
20 - 1 tbsp extra-virgin olive oil
21 - Salt and freshly ground black pepper, to taste
→ To serve
22 - Lemon wedges
23 - Fresh parsley or mint leaves
24 - Flatbreads (optional)
# Method Steps:
01 - In a large bowl, combine ground lamb, grated onion, minced garlic, chopped parsley, chopped mint, ground cumin, ground coriander, ground cinnamon, smoked paprika, red pepper flakes (if using), salt, black pepper and olive oil; mix until ingredients are evenly distributed and mixture becomes slightly tacky.
02 - Divide the mixture into 8 equal portions. With damp hands, thread each portion onto a metal skewer or a soaked wooden skewer and shape into a long, oval sausage form, pressing firmly so the meat adheres to the skewer.
03 - Preheat a grill or grill pan over medium-high heat and lightly brush or spray the grates with oil to prevent sticking.
04 - Place skewers on the hot grill and cook for 10 to 12 minutes, turning occasionally, until the exterior is well browned and an instant-read thermometer inserted into the center reaches 71°C (160°F) or juices run clear.
05 - While the kofta grills, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, chopped mint, lemon juice, olive oil, salt and pepper in a bowl; stir until smooth, taste and adjust seasoning, then refrigerate until ready to serve.
06 - Remove skewers from the grill and rest for 2 minutes. Serve hot with tzatziki, lemon wedges and fresh herbs; offer flatbreads on the side if desired.
