# Method Steps:

01 - In a food processor, combine tahini and lemon juice and process for one minute until creamy. Add olive oil, minced garlic, ground cumin, and salt; process for thirty seconds. Add chickpeas and process for one minute. Scrape down the sides, add two tablespoons cold water, and continue processing until smooth and fluffy. Adjust salt or lemon juice to taste. Transfer to a bowl, drizzle with olive oil, and optionally garnish with paprika or sesame seeds.
02 - Dissolve yeast and sugar in warm water in a bowl and let stand for five minutes until frothy. Add flour, salt, and olive oil and mix until a dough forms.
03 - Knead the dough on a floured surface for five to seven minutes until smooth. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for one hour.
04 - Preheat oven to 475°F and place a baking stone or tray inside to heat. Punch down the dough, divide into six balls, and roll each ball into a 1/4-inch thick circle.
