# Method Steps:
01 - In a medium mixing bowl, blend diced mango, sliced green onions, jalapeño, and chopped cilantro. Season mixture lightly with salt and pepper to enhance flavors.
02 - Arrange flour tortillas flat. Evenly distribute half of the Monterey Jack and cheddar cheeses onto one side of each tortilla.
03 - Spread mango mixture atop the cheese. Sprinkle remaining cheeses over filling, then fold tortillas into semicircles to enclose the contents.
04 - Heat 1/2 tablespoon of butter in a large skillet over medium heat. Place folded tortillas into the skillet, cooking each for 2–3 minutes per side until golden brown and cheeses are fully melted. Repeat with remaining butter and tortillas.
05 - Transfer cooked quesadillas to a cutting board. Allow to cool briefly. Using a sharp knife, cut each into three triangles. Serve warm, garnishing with extra cilantro if desired.
