# Method Steps:
01 - Preheat oven to 425°F. Toss sweet potato cubes with 1 tbsp olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25 to 30 minutes, turning once halfway through, until tender and golden.
02 - In a bowl, combine sliced beef with 2 tbsp olive oil, smoked paprika, garlic powder, kosher salt, and black pepper. Mix until fully coated.
03 - Heat a large skillet over high heat. Sear beef in batches for 2 to 3 minutes per side, cooking until just done. Remove from heat and keep warm.
04 - Whisk together Greek yogurt, lime juice, chopped cilantro, salt, and pepper in a small bowl until smooth.
